Who doesn't love a quick dinner recipe that the whole family enjoys? I certainly do and I needed one today because we've been incredibly busy this week. Between chauffeuring my kids to camps, getting to doctor's appointments and work meetings, I haven't had much time to think about meal planning for the week. I happen to have some flank steak in the freezer that I purchased at Costco when it was on sale. I threw it in the refrigerator to thaw overnight and thought to myself, "I'll do something with that for dinner." I don't know about your tribe, but mine could eat Mexican-inspired food just about every night of the week, so I decided to make some quick fajitas. I cut the meat and sprinkled fajita seasoning on it that I made from this recipe. Then, I already had some bell peppers, so I cut those and seasoned them with the same recipe that I used on the steak. I sautéed the steak first with a little bit of olive oil and then set it aside so that I could do the same with the vegetables. Next, I added the steak back to the skillet to make sure that it would be warm. I opened a can of black beans to warm up in a pot on the stove to complete the meal. Very fancy, I know! I then raided my refrigerator to see what toppings we had on hand: sour cream, cheese, and an avocado. Done and done. Here's to quick dinners that please the whole family!
